Low Fodmap Tomatillo Salsa

An easy salsa that requires little effort!

Ingredients
  

  • 6 tomatillos
  • 1/2 tsp garlic olive oil
  • 1 tsp shallot or onion olive oil
  • 1 tbsp fresh cilantro
  • 3/4 tsp cumin
  • 1/4 tsp oregano
  • Juice 1/2 lime
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper

Method
 

  1. Preheat oven to 425℉ and line a cookie sheet with foil.
  2. Peel the outer skin off the tomatillos.
  3. Rinse the tomatillos, dry with a paper towel and place on the foil.
  4. Cook in the oven for about 20 minutes - the skin will start to brown in a few spots.
  5. Remove tomatillos from the oven and allow to cool slightly.
  6. Place the tomatillos (the entire thing) in a food processor or blender with the other salsa ingredients and puree until smooth.
  7. Pour into a bowl and serve with chips!
