Place salt, pepper and onion substitute in a small bowl and mix to combine.
Place chicken breasts in slow cooker, pour water overtop and top chicken with dry mixture and garlic olive oil.
Set for high for 3-4 hours or low for 4-6 hours. If you're able (i.e. around the house), flip chicken half way through.
As chicken finishes cooking test to see how quickly it pulls apart. When chicken easily comes apart shred all chicken. Place shredded chicken in the slow cooker, add oregano and toss with tongs. Cover and cook for 5 more minutes.
Store chicken in airtight container for four days in the fridge. Use in salads, bowls, tacos, pasta, soup or whatever!
