Low Fodmap Salsa

A fresh, delicious and easy salsa.

Ingredients
  

  • 1/2 cucumber; peeled, cored & finely chopped
  • 1/2 red bell pepper; cored & finely chopped
  • 3 tomatoes; cored & finely chopped
  • 3 green onions; chopped
  • 1/2 tsp garlic olive oil
  • 1/2 tsp Texana Roasted Onion Olive Oil
  • 1/8 tsp Chili powder
  • Zest of 2 limes
  • Juice of 1 lime
  • Salt & pepper to taste
  • Pinch Cilantro (or more to taste)

Instructions
 

  • Combine lime juice and zest, garlic olive oil, roasted onion olive oil, chili powder, salt and pepper. Swirl to get chili powder dispersed.
  • Combine cucumber, bell pepper and tomatoes. Pour liquid ingredients overtop and toss.
  • Place in fridge for 1 hour, tossing occasionally.
  • Remove salsa from fridge and drain most of the liquid. (You can reserve liquid for a dressing or sauce.)
  • Add green onions right before serving and toss.
  • Enjoy 1/2 cup for a low-Fodmap serving.
