Low Fodmap Salsa

A fresh, delicious and easy salsa.

Ingredients
  

  • 1/2 cucumber; peeled, cored & finely chopped
  • 1/2 red bell pepper; cored & finely chopped
  • 1/4 green bell pepper; cored & finely chopped
  • 8 cups grape tomatoes; finely chopped
  • 3 green onions; chopped
  • 1/2 tsp garlic olive oil
  • 1/2 tsp Texana Roasted Onion Olive Oil
  • 1/8 tsp Chili powder
  • Zest of 1/2 lime
  • Juice of 1 lime
  • Salt & pepper to taste
  • Pinch Cilantro (or more to taste)

Method
 

  1. Combine lime juice and zest, garlic olive oil, roasted onion olive oil, chili powder, salt and pepper. Swirl to get chili powder dispersed.
  2. Combine cucumber, bell pepper and tomatoes. Pour liquid ingredients overtop and toss.
  3. Place in fridge for 1 hour, tossing occasionally.
  4. Remove salsa from fridge and drain most of the liquid. (You can reserve liquid for a dressing or sauce.)
  5. Add green onions right before serving and toss.
  6. Enjoy 1/2 cup for a low-Fodmap serving.
