Mediterranean flavors coupled with simple shredded chicken for a healthy dinner!

Ingredients
  

  • 1 cup Shredded chicken
  • 1 cup Quinoa, brown rice or combination
  • 1/8 cup Green onions (green parts only)
  • 3 cups Arugula
  • 8 Kalamata olives
  • 1/8 cup Mild pickled banana peppers
  • 1/2 cup Tomato, deseeded & diced
  • Cucumber sauce
  • 2 tbsp Feta cheese, if tolerated
  • Olive oil
  • Lemon wedges

Dressing

  • 1/4 cup Hummus
  • 1/4 cup Water
  • 1 tsp Garlic olive oil
  • 1/8 tsp Oregano
  • 1/8 tsp Parsley
  • Juice 1/2 lemon
  • Salt & pepper

Cucumber Sauce

  • 1 cup Low Fodmap yogurt
  • 1/2 cup Cucumber, deseeded & chopped
  • Juice 1/2 lemon
  • 1 tsp White wine vinegar
  • 1 tbsp Fresh dill
  • Dash Garlic olive oil
  • Salt & pepper

Instructions
 

  • Make dressing and cucumber sauce and set aside
  • Cook quinoa/rice according to directions
  • Warm up shredded chicken in the microwave
  • Chop up veggies
  • Pile grain, arugula, veggies, chicken, banana peppers and olives onto a plate and add 1/4 cup of cucumber sauce per serving
  • Serve with dressing and lemon wedges. Limit each dressing to 1/8 cup per serving unless you can tolerate more
