Method
- Make dressing and cucumber sauce and set aside
- Cook quinoa/rice according to directions
- Warm up shredded chicken in the microwave
- Chop up veggies
- Pile grain, arugula, veggies, chicken, banana peppers and olives onto a plate and add 1/4 cup of cucumber sauce per serving
- Serve with dressing and lemon wedges. Limit each dressing to 1/8 cup per serving unless you can tolerate more
