Ingredients
  

Salad
  • 6 cups low Fodmap lettuce
  • 1 cup green cabbage
  • 1/4 cup canned black beans
  • 1 1/2 cups shredded chicken (rotisserie chicken works too!)
  • 1/2 cup tomato, deseeded & chopped
  • 2 green onions, chopped (green parts only)
Seasoning Mix for Shredded Chicken
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1/4 tsp paprika
Dressing
  • Juice of 1 lime
  • 3 tbsp avocado oil
  • 1 tbsp white wine vinegar
  • 1 tsp garlic olive oil
  • 1 tsp Shallot olive oil
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • Dash cayenne pepper
  • Salt & pepper to taste
Toppings

Method
 

  1. Mix dressing ingredients and set aside.
  2. Chop veggies and lettuce.
  3. Cook black beans according to directions. When finished, rinse thoroughly with water.
  4. Toss chicken with seasoning and heat up in the microwave if desired.
  5. Toss lettuce, veggies, chicken, black beans and desired amount of dressing together. Top with tortilla strips and serve with lime wedges.
