Method
- Mix dry spice ingredients together and set aside.
- Slice bell peppers into thin slices. Heat canola oil in a pan on the stove and cook bell peppers over medium heat. As they soften, add half of the spice mix and garlic olive oil and toss to mix.
- Cook ground beef over medium heat in a pan on the stove. After beef is browned, add the other half of the spice mix.
- Mix crema ingredients and set aside.
- Chop tomatoes, green onions, and cilantro, and cut a lime into wedges.
- Pile beef and bell peppers into the taco shells. Limit bell peppers to a 1/8 cup between TWO tacos. (Serving size per person is 2 tacos.)
- Top with tomato, green onion, cilantro and lime crema. Serve with lime wedges.
