Low Fodmap Beef Tacos with Lime Crema

Beef & Peppers
- 1 lb 93% lean ground beef
- 1/2 medium red bell pepper
- 1 tsp garlic olive oil, divided
- 1 tsp canola oil
Lime Crema
- 1/2 cup low-Fodmap yogurt
- Pinch cayenne pepper
- 1/2 tsp garlic olive oil
- Juice 1 lime
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 tbsp chopped fresh cilantro
Toppings & to serve
- 1/2 cup chopped common tomato
- 1/4 cup chopped green onions (green parts only)
- 8 corn tortillas
- Chopped fresh cilantro
- Lime wedges
Mix dry spice ingredients together and set aside.
Slice bell peppers into thin slices. Heat canola oil in a pan on the stove and cook bell peppers over medium heat. As they soften, add half of the spice mix and garlic olive oil and toss to mix.
Cook ground beef over medium heat in a pan on the stove. After beef is browned, add the other half of the spice mix.
Mix crema ingredients and set aside.
Chop tomatoes, green onions, and cilantro, and cut a lime into wedges.
Pile beef and bell peppers into the taco shells. Limit bell peppers to a 1/8 cup between TWO tacos. (Serving size per person is 2 tacos.)
Top with tomato, green onion, cilantro and lime crema. Serve with lime wedges.
