Low Fodmap Beef Tacos with Lime Crema

Ingredients
  

Beef & Peppers

  • 1 lb 93% lean ground beef
  • 1/2 medium red bell pepper
  • 1 tsp garlic olive oil, divided
  • 1 tsp canola oil

Dry spice mix

Lime Crema

  • 1/2 cup low-Fodmap yogurt
  • Pinch cayenne pepper
  • 1/2 tsp garlic olive oil
  • Juice 1 lime
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1 tbsp chopped fresh cilantro

Toppings & to serve

  • 1/2 cup chopped common tomato
  • 1/4 cup chopped green onions (green parts only)
  • 8 corn tortillas
  • Chopped fresh cilantro
  • Lime wedges

Instructions
 

  • Mix dry spice ingredients together and set aside.
  • Slice bell peppers into thin slices. Heat canola oil in a pan on the stove and cook bell peppers over medium heat. As they soften, add half of the spice mix and garlic olive oil and toss to mix.
  • Cook ground beef over medium heat in a pan on the stove. After beef is browned, add the other half of the spice mix.
  • Mix crema ingredients and set aside.
  • Chop tomatoes, green onions, and cilantro, and cut a lime into wedges.
  • Pile beef and bell peppers into the taco shells. Limit bell peppers to a 1/8 cup between TWO tacos. (Serving size per person is 2 tacos.)
  • Top with tomato, green onion, cilantro and lime crema. Serve with lime wedges.
