A simple salsa that is fresh and delicious!
Early in the Fodmap journey I was looking for a salsa that was not super heavy on tomatoes. At the time red bell peppers were listed as no Fodmaps so I loaded up. Since then Monash has retested and found they can be problematic so as far as the recipe I have reigned in the amount of bell pepper.
Try this salsa on the Low Fodmap Beef Tacos with Lime Crema. If you’re on a Mexican-Southwest kick, try the Low Fodmap Guacamole, Low Fodmap Tomatillo Salsa or the Low Fodmap Southwest Salad. Just remember to keep an eye on portions to keep the meal low fodmap.
Low Fodmap Salsa

Ingredients
- 1/2 cucumber; peeled, cored & finely chopped
- 1/2 red bell pepper; cored & finely chopped
- 3 tomatoes; cored & finely chopped
- 3 green onions; chopped
- 1/2 tsp garlic olive oil
- 1/2 tsp Texana Roasted Onion Olive Oil
- 1/8 tsp Chili powder
- Zest of 2 limes
- Juice of 1 lime
- Salt & pepper to taste
- Pinch Cilantro (or more to taste)
Instructions
- Combine lime juice and zest, garlic olive oil, roasted onion olive oil, chili powder, salt and pepper. Swirl to get chili powder dispersed.
- Combine cucumber, bell pepper and tomatoes. Pour liquid ingredients overtop and toss.
- Place in fridge for 1 hour, tossing occasionally.
- Remove salsa from fridge and drain most of the liquid. (You can reserve liquid for a dressing or sauce.)
- Add green onions right before serving and toss.
- Enjoy 1/2 cup for a low-Fodmap serving.
