I went to a restaurant that had a cilantro pesto over salmon and it was delicious. I decided to try to make something similar as an appetizer. Using more almonds than pine nuts brings down the Fodmaps which means you can eat more. 🙂

For a completely different dish you can add this pesto to some low Fodmap yogurt and drizzle it over salmon to elevate a simple salmon to something great!

Ingredients
  

  • 1/3 cup Cilantro leaves
  • 3 tbsp Pine nuts
  • 1/4 cup Almonds
  • 1 tbsp Garlic olive oil
  • 1/3 cup Olive oil (or more)
  • Salt & pepper

Method
 

  1. Mix cilantro leaves, pine nuts and almonds in a food processor and pulse.
  2. Add salt, pepper and garlic olive oil and pulse again.
  3. Add olive oil slowly and mix until desired consistency is achieved.
