I really like Southwest and Mexican inspired dishes so it did not take long for me to come up with another way to use the shredded chicken with a salad with some Mexican flavors!
As long as you have the shredded chicken or rotisserie ready, this meal is super fast and easy.

Ingredients
Salad
- 6 cups low Fodmap lettuce
- 1 cup green cabbage
- 1/4 cup canned black beans
- 1 1/2 cups shredded chicken (rotisserie chicken works too!)
- 1/2 cup tomato, deseeded & chopped
- 2 green onions, chopped (green parts only)
Seasoning Mix for Shredded Chicken
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp paprika
Dressing
- Juice of 1 lime
- 3 tbsp avocado oil
- 1 tbsp white wine vinegar
- 1 tsp garlic olive oil
- 1 tsp Shallot olive oil
- 1/4 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp chili powder
- Dash cayenne pepper
- Salt & pepper to taste
Toppings
- Plain tortilla strips
- Lime wedges
Instructions
- Mix dressing ingredients and set aside.
- Chop veggies and lettuce.
- Cook black beans according to directions. When finished, rinse thoroughly with water.
- Toss chicken with seasoning and heat up in the microwave if desired.
- Toss lettuce, veggies, chicken, black beans and desired amount of dressing together. Top with tortilla strips and serve with lime wedges.
