Low Fodmap Shredded Chicken

This is an easy slow cooker recipe that leaves you with delicious chicken that can be easily thrown into salads, bowls, tacos, pasta, soups and more. At least once a month I will buy a few pounds of chicken breasts and on Sunday I throw the ingredients together in the slow cooker and forget about it. Hours later stroll back to the kitchen, shred the chicken and you have the protein for your meals for the week!

Ingredients
  

  • 4 chicken breasts
  • 1 tbsp garlic olive oil
  • 1 tsp SnS or Freefod onion substitute
  • 1 tsp oregano
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/8 cup water

Instructions
 

  • Place salt, pepper, oregano and onion substitute in a small bowl and mix to combine.
  • Place chicken breasts in slow cooker, pour water overtop and top chicken with dry mixture and olive oil.
  • Set for high for 3-4 hours or low for 4-6 hours. Flip half way through so chicken on the top is submerged in juices at the bottom.
  • As chicken finishes cooking test to see how quickly it pulls apart. When chicken easily comes apart shred all chicken and toss with tongs in slow cooker. Cook for 10 more minutes.
  • Store chicken in airtight container for four days in the fridge. Use in salads, bowls, tacos, pasta, soup or whatever!
