I love having different cuisines and types of dishes often, but I also like simplicity on the weeknight. So I started buying chicken breasts and tossing the meat in a small slow cooker with some basic seasonings and that served as the protein for four weeknight meals.
The shredded chicken is super versatile and best of all – the recipes also work with a rotisserie chicken if you don’t get around to making the chicken in the slow cooker.
