Low Fodmap Ras El Hanout Chicken Meatballs with Quinoa Carrot Salad

While reading about Ras El Hanout I learned that it’s a combination of spices and depending on who you ask you may get a different list of ingredients and amounts of each ingredient. This is my take on Ras El Hanout, but the spice can vary. On it’s own the spice didn’t wow me, but when coupled with a meat and lemon juice it was delicious!

The meatballs can be eaten by themselves but I recommend serving them with the cool mint yogurt sauce.

Ingredients
  

Ras El Hanout (makes extra!)

  • 1 1/4 tsp ground ginger
  • 3/4 tsp cinnamon
  • 1/2 tsp coriander
  • 1/4 tsp cayenne
  • 1/4 tsp all spice
  • 1/8 tsp ground clove
  • 1 tsp black pepper
  • 1/2 tsp cumin
  • 1 tsp nutmeg
  • 1 tsp turmeric
  • 1 tsp cardamom
  • 1/2 tsp paprika

Meatballs

  • 1 lb ground chicken
  • 1 tsp ras el hanout
  • 1 tbsp lemon juice
  • 1 tbsp onion olive oil
  • 1 tbsp garlic olive oil
  • 1 egg
  • 1 cup gluten-free breadcrumbs (regular, not panko)

Yogurt sauce

  • 1/2 cup low fodmap yogurt
  • 1/2 tbsp lemon juice
  • 1/2 tsp garlic olive oil
  • 1/8 cup fresh mint, finely chopped
  • salt & pepper to taste

Quinoa & Carrot Salad

  • 1 cups quinoa
  • 2 cups water
  • 1 cube low Fodmap chicken or veggie broth
  • 1/4 cup shredded carrot
  • 3 tbsp green onions, chopped (green parts only)
  • 2 tbsp olive oil
  • 1/2 tsp garlic olive oil
  • 1 tbsp lemon juice
  • 1/2 tbsp maple syrup
  • 1/8 tsp coriander
  • 1/8 tsp paprika
  • 1/8 tsp cumin
  • 1/8 tsp smoked paprika
  • salt & pepper to taste

Instructions
 

Spice mix

  • Combine all spice mix ingredients and set aside.

Quinoa salad

  • Bring water to a boil and drop in broth cube and break apart with wooden spoon. Stir. Add quinoa and cook according to instructions on quinoa package.
  • As soon as quinoa is finished cooking, toss in shredded carrot and cover. Let sit for a few minutes.
  • Pour quinoa and carrot into mixing or serving bowl. In a small bowl, mix spices, maple syrup, olive oils and lemon juice together. Pour over quinoa and carrots in mixing bowl, add green onions and toss to combine.

Meatballs

  • Preheat oven to 400℉.
  • Whisk egg together with olive oils and lemon juice. Stir in ras el hanout.
  • Place ground chicken in bowl with egg mixture, and breadcrumbs.
  • Place meatballs on cookie sheet lined with parchment paper and place in oven. Cook until internal temperature is 165℉, approximately ten minutes.
  • To get a browner surface you can pull the meatballs out of the oven beore they're finished, spray the meatballs with Pam or similar product, and broil the meatballs the last couple minutes.

Yogurt Sauce

  • Add all ingredients together and mix.

Serving

  • Serve meatballs with yogurt sauce and salad. Limit yogurt to 1/4 cup and quinoa salad to 1/2 cup per serving. If you've already completed the Reintroduction phase and know your own limit, then go for more.
