Low Fodmap Sloppy Joes

My mother made these sloppy joes when I was growing up and when I got my first place I was excited to learn the recipe was super easy. It was a favorite at potlucks at work and my manager told me I was not allowed to bring any other dish.

Years later after I discovered Fodmaps I was bummed knowing my heaping plates of veggies were going to decrease in size, and while this recipe is nothing close to my beloved roasted cauliflower, I had a mini-celebration when I realized an easy, long-standing recipe was already Fodmap friendly with the simple change of using a different ketchup (Fody Ketchup).

 

Low Fodmap Sloppy Joes Ingredients

Bring a pan to medium heat and cook the ground beef until all the pink is gone. Drain the fat from the pan.

This is completely optional, but I do it every time because it only takes a few extra minutes and it’s a bit healthier (i.e. I feel less guilty about all the sugar) and I prefer the texture. Put the meat in a metal colander with small holes and use the back of a rice spoon and push out the grease and grind the meat into smaller clumps. I lay down a plate, cover it with some paper towels and place the colander on top (this absorbs the grease so it does not go down the drain). I prefer the finer meat in my sloppy joes, but again, it’s completely optional.

Toss the meat back into the pan and top with the other three ingredients.

Mix all ingredients. Serve on hamburger buns. I use cheap buns, it is sloppy joes after all. Use gluten-free buns if you do not tolerate gluten. (I am lucky that I can tolerate gluten.)

Ingredients
  

  • 1 1/2 lb ground beef I use 93% lean
  • 2/3 cup Fody ketchup
  • 1/3 cup yellow mustard
  • 1/2 cup white sugar
  • 4 hamburger buns (gluten-free if necessary)

Instructions
 

  • Over medium heat cook ground beef in frying pan on stove top.
  • Once meat is completely browned, drain fat.
  • See optional step above to drain and mince meat in metal colander.
  • Return ground beef to pan and put on low heat. Add ketchup, mustard and sugar and toss to combine.
  • Serve on a bun. I use basic hamburger buns (it is sloppy joes after all); use gluten-free hamburger buns to make recipe free of Fodmaps.
